Power Cookies w/ Coconut Flour

I N G R E D I E N T S

INGREDIENTS

  • 1 overripe Banana + some water

  • 1 Egg

  • 2 Tbsp/ 30g Oat Flour

  • 2 Tbsp/ 30g Coconut Flour

  • 20g Nutmeal (Almond or Hazelnut) i make my own in a blender

  • 1/2 tsp baking power

  • 1 Tbsp Coconut Flakes

  • pinch of salt

  • 1/2 tsp cinnamon

  • 1 handful of rolled oats


EXTRAS

  • 1 handful of Raisins

  • 25g big dark chocolate chunks

  • 1 handful of Cranberries

  • Chia Seeds

  • Flax Seeds

  • Coconut Flakes



M E T H O D


  1. Preheat the oven to 180C degrees.

  2. Mash up the overripe Banana in a plastic bowl. i like to add some water to ease the process.

  3. Add in the egg. Mix well.

  4. In a seperate bowl combine all flours, baking powder, salt, cinnamon, rolled oats.

  5. Add the flour mixture to the wet ingredients. Mix.

  6. Now you can add any extra nuts/ seeds/ dried fruits that you like. I like to add some big dark chocolate chunks, raisins and cranberries as well as chia and flax seeds. You can play around with these "extra ingedients" and find out what you like best.

  7. I use an ice-cream scoop to place little balls of the batter onto a baking sheet.

  8. Bake in the pre-heated oven for about 15-18min.

  9. Take out. Let it cool. Freeze up for a daily snack. ENJOY!
