Healthy Chewy Cinnamon Banana Bread

Today I have a nice vegan recipe for you all! I love this Banana Bread! I added in nuts and raisins and apples. It's not the traditional Banana Bread, but give it a try and let me know what you think!

I personally couldn't get enough of it!

 







Cinnamon Banana Bread w/ nuts, raisins and apples


I N G R E D I E N T S

DRY INGREDIENTS

  • 1 cup Whole Wheat Spelt Flour

  • 1/2 cup Oat flour

  • 1/2 cup Nutmeal (Almond or Hazelnut) i make my own in a blender

  • 1 tsp Baking Powder

  • one pinch of salt

  • 1 Tbs Cinnamon

  • 1 tsp Cloves

WET INGREDIENTS

  • 2 Eggs

  • 2 ripe Bananas, mashed

  • 3/4 cup Applesauce (unsweetened or home-made)

  • 25ml Coconut Oil

  • 15ml Agave Syrup or Maple Syrup

TOPPINGS

  • 1 Apple

  • Almond flakes

  • Walnuts

  • Raisins

  • Oats

  • 2 TBS Coconut oil

  • 1 TBS Erythritol











M E T H O D

  1. Preheat Oven to 375 (200 Celsius)

  2. In a large bowl mash the bananas with a fork, you can place them in the oven for a few minutes if they aren't as soft and as ripe as you'd like them to be. Now add in the apple sauce, coconut oil and agave syrup. Whisk in two eggs, combine well.

  3. For the oat flour I add in the 1/2 of oats into a mixer and blend them until it becomes a flour. I do the same to make the Hazelnut Meal (or any nut of your choice).

  4. Add the dry ingredients into a separate bowl: flours, baking powder, salt and spices. Mix well.

  5. Chop the apple into squares. Add Cinnamon Erythritol and mix well.

  6. Fold the dry ingredients into the wet. Sprinkle in some raisins, nuts and apple if you like. Combine well. Pour the batter into an already greased loaf pan. I used parchment paper.

  7. For the topping add raisins, oats, almond flakes, apple squares and chopped walnuts to a bowl. Add the coconut oil, give it a stir and add on top of the loaf.

  8. Bake for 55-60 minutes. It should be chewy but not fluid.

  9. Let cool.

  10. ENJOY with jam or peanut butter :)


NOTES If the toppings get too dark, place aluminum foil over the loaf.
